The art of choosing the Aszú berries
Each crate is examined to detect the bad rot. The more the crates are selected, the better the raw material will be. From a year to another, the raw material varies tremendousely : quantity, quality, nature of the botrytis, size and taste of the berries…
The Aszú berries are so concentrated that they require a specific winemaking process. The berries need to macerate in a wine. The time of maceration depends on the year.
After ten years experience, a special tank has been built so that Samuel can work in the best conditions.
The successive fermentations explain the potential of the region : they give to the wines all its characteristics and complexity. That is why the wine is aged in full barrels, not closed hermetically. Samuel looks after them to be sure of the evolution at different times of the year. The wines stay four years minimum in barrels.
