Thanks to the magic botrytis, Tokaj off ers exceptional aging wines. Not less than two years in Hungarian Oak barrels are necessary to give to our wines their complexity. The With Botrytis stay up to six years in these barrels. Tokaj is build on two levels: the vineyard on the ground floor, the cellars on the basement where the atmosphere is smooth, cool, humid and well balanced to age the wines.

It may be the Great Dry Wine from Tokaj. It may be the only dry wine craft ed by Botrytis. It may be the reason why the Comte de Chalon came from Jura to spend his life in Tokaj. This wine gives a full range of emotional sensations in your body, like the classical Tokaji Aszú. The Tokaji Sweet Szamorodni is a light version of the Tokaji Aszú. The grapes are harvested entirely, that means that the whole bunches are cut off. Szamorodni means « like it comes » in Polish. This wine is a fi rst approach to understand the complexity and the very particular style of the Tokaj wines.

The Tokaji Aszú is The Great Sweet Wine of Tokaj, offering a concert of aromas, dry fruits (almonds, nuts…) and fresh fruits all together (apricot, exotic fruits), spices, and a wonderful length. „Aszú” means „dried out”. The berries are in the best years botrytised as well as dessicated by over-maturation. We try to make wines that express a great balance between good oxydation and aromatic expression.

Our fi rst vintage, the 2000, gives us the opportunity to appreciate the evolution of the Aszú wines. The aromas change, the wine is going through several periods, giving year aſt er year new surprises. We ought to taste it regularly to discover the diff erent palettes those impressive wines can off er. Serve it fresh, 12°C in big glasses to enjoy the complexity of the aromas.
